Javier Sanz and Juan Sahuquillo, friends since childhood, shared a passion for cooking and returned to Casas-Ibáñez after studying at the Hotel and Catering School in Toledo and working in some of the best restaurants in Spain: Mugaritz, Atrio, Casa Marcial, Andreu Genestra...
His aim was to transform the gastronomic offer of the Cañitas Maite Hotel, a family business, and make it a reference point for Spanish cuisine. An important incentive for this task was being named Cocineros Revelación de Madrid Fusión (Revelation Chefs of Madrid Fusion) in 2021.
In January 2022, they opened their first restaurant outside Cañitas Maite. It was Oba-, a gastronomic restaurant located in the same building as Casas-Ibáñez in Albacete, where Juan and Javier set out to explore the use of the simplest products of La Manchuela with the most avant-garde techniques. Within a year of opening, they were awarded their first star.
In 2022 they embark on their next adventure. Juan and Javier take over the kitchens at Can Domo in Ibiza. Using local products and incorporating some of the elements that have made them famous, they manage to offer an honest and high-quality proposal. And their latest opening will take place in October 2022, with the arrival of the CEBO kitchen in Madrid, where they propose a cuisine focused on the product.
