Sara and Jorge share the same understanding of cuisine, and this has given rise to the counter-current project that is the OSA restaurant.
Sara Peral began her career at Coque and later moved to Mugaritz to give meaning to her creative vision. After moving to Madrid, she worked in the kitchen at DiverXO, where she combined efficiency and results. In recent years, she has been in charge of the kitchens at Pedegrú and Lafayette, where she has demonstrated her leadership skills and her love of goldsmithing.
Her colleague, Jorge Muñoz, started out in the kitchens before moving on to gastronomy classes. Wanting to learn more, he ended up at Mugaritz (where he met Sara), an experience that shaped his future approach to the profession. Returning to Madrid, he worked at La Tasquita de Enfrente, before making his mark at Picones de María, with his own point of view and a language based on tradition and risk. At the latter restaurant he was reunited with Sara, his former client, and the next step was to open his own project, OSA.
